This is a low-carb treat that is easy to make and the time involved is mostly waiting for the oven timer to go off. This past weekend I decided that I was done not being able to enjoy crisps like most people just because I am on a low-carb diet.  This past weekend I decided that I was done not being able to enjoy chips (American) or crisps (British) like most people because I am on a low-carb diet.  So, after some research, I discovered that I could make crisps out of cheddar cheese. Crisps out of cheese you say.  Nonsense, cheese is soft and not crispy at all.  It is true. There are three things that happen when the cheese is baked:

  1. The shredded cheese melts and combines into a mush.
  2. The moisture in the cheese evaporates and becomes drier.
  3. The oils in the cheese are brought to the surface and can easily be removed.

The result is crispy cheese that you can eat as is or be used with a dip or to be used with a topping.

Cheese Crisps


Crisps made from shredded cheese can easily take the place of potato chips when on a low-carb diet.

 
  1. Place piles of shredded cheese on the parchment paper with room between the piles to allow for expansion.

  2. Bake for about 20 minutes.
